Over the Ravine

The Finger Lakes AVA, (American Viticultural Area) of upstate New York was awarded in 1982 and now has over 100 wineries with 9400 acres under vine.  By receiving its own AVA, the U.S. government has recognized the region as having its own, unique characteristic for growing grapes as well as producing high quality wines. Napa Valley is an AVA, for example.

The ancient soils of the Finger Lakes, are composed of beds of shale, producing wines with steely focus, natural acidity, liveliness and balanced alcohol. All characteristic that has led us to RAVINES Wine Cellars.

RAVINES was founded in 2000 by Morten and Lisa Hallgren with the dream of producing world class wines utilizing Old World winemaking traditions combined with New World technologies.
 Morton, a native of France, grew up in the Provence region on his family’s winemaking estate, Domaine de Castel Roubine. He received his enology degree from Montpillier and after graduation worked at the prestigious Cos d’Estournel in Bordeaux. Morten eventually found his way to the U.S. where he worked at the Biltmore Estate in North Carolina and then Dr. Frank’s Vinifera Wine Cellars in the Finger Lakes before starting his own winery.

After six years at Dr. Frank, Morten and Lisa saw an opportunity to create a winery unique to the region. With that, their focus is on utilizing the terroir, (soils and climate), of the region to produce dry, cool climate wines that reflect balance and elegance, characteristic of the Old World styles Morten grew up with.

The wines of RAVINES Wine Cellars deliver all of what Morten and Lisa have intended. There is a common thread of balanced acidity with restrained alcohol and a fruit component that takes advantage of the minerality that the soils provide. Their wines are delicious. Oh, and yes, World Class.

2013 Keuka Village White -- $11.99

With this innovative blend, we are producing a French-American hybrid blend,(Cayuga and Vignoles), that breaks down the boundary between traditional hybrid wines and vinifera wines.

The nose shows great fruity intensity with aromas of melon, lime, and tangerine as well as grassy notes. In addition, the wine displays noticeable floral and mineral components which results in a complex aromas.

This is a very lively, fresh, fruity off-dry wine with just enough sweetness to balance the acidity.
2013 Dry Riesling -- $16.99

Ravines Dry Riesling is an elegant, dry style with complex aromatics, distinctive minerality, and vibrant acidity.
The nose displays white flower notes, citrus, white peach and apple aromas as well as a distinct minerality. On the palate, the Finger Lakes acidic backbone provides great focus and liveliness. The aging on the fine lees has resulted in a gentle round texture supporting the floral and mineral elements of this Riesling. A long, clean finish promises a bright evolution for this wine.
2011 Pinot Noir -- $24.99

Pinot Noir is the original red vinifera grape variety of the Finger Lakes with a grape growing history going back to the early 1950’s. It is one of the very rare regions, outside of Burgundy, where Pinot Noir can show its true character: fresh fruit, natural acidity, lighter and softer texture and great complexity.
This is a classic expression of cool climate Pinot Noir. A lighter, bright, garnet hue as you would expect from this grape variety. The nose shows the many layers of nuances and complexity associated with Pinot Noir: violets, nutmeg, cloves, plums, cherries as well as the mushroom/ forest floor component. On the palate, the lively acidity ensures freshness and balance.  This Pinot Noir has a very long, clean finish lingering with spicy and earthy elements. 

2012 Cabernet Franc -- $19.99

Cabernet Franc is poised to become the flagship red variety of the Finger Lakes. It is particularly well suited to the growing conditions of the Finger Lakes, both in terms of temperature resistance and length of growing season. The vibrant fruit, lively acidity, and earthy and spicy notes are the characteristics of this grape variety; particularly in the Finger Lakes region.
Deep ruby red color with ripe plum and red berry fruit, almost jammy, with spicy and earthy aromas. Full bodied style with very soft  texture but good structure.

2009 Meritage Red Blend -- $24.99

Meritage is our blend of Cabernet Sauvignon, Cabernet Franc and Merlot. At Ravines, we are able to produce this wine in a classic, balanced and age-worthy style. While it requires taking risks in the vineyard, we are able to produce wines combining all of the assets of the Finger Lakes: intense fruit, nice acidity, moderate alcohol, soft texture and a broad palate of aromas.

This elegant blend has great overall balance. Aromas of plum, cherry, mint, and tobacco leaf as well as spicy and earthy elements complemented by a lively acidity.
